Pickled daikon radish

This is super simple and very delicious!  I really like this on rice (and on bahn mi) and it's nice to have around to use as a topping. This would also be good on noodles, especially rice noodles, or in a salad, or on plain frozen veggies. When I have some time (and energy and the ingredients) I like to chop up a scallion and a couple grape tomatoes and put it on top of rice with a little oyster sauce and a bit of sambal oolek. (The pictures are all going to be of a carrot that I added to my previously pickled radish.) daikon radish white vinegar salt sugar optional: carrot, spices, other veggies Peel the daikon radish (or carrot as the case may be). Then julienne it. I have this cool julienne peeler which makes it go super quick and then I have thin, similar sized pieces but you could definitely do this by hand- just make sure they are thin pieces so they pickle well. Cranberry relish/sauce

This cranberry sauce/relish is absolutely delicious! It's not too sour or too sweet and has a complex flavor. It is good enough to eat by itself. It probably has a lot of vitamins and nutrients and is really good for you. I made it around last Thanksgiving and have been wanting to make it again ever since. Once I make it again, I'll add pictures, as cranberries are out of season right now. 1 bag of cranberries some sugar (if your cranberry bag has a specific amount you can use that, or to taste) 1 orange: zest and juice 1/2 lemon: zest and juice ginger, grated optional: splash of bourbon Put all the ingredients into a blender/food processor and blend until mostly mixed but still a bit chunky. Put into a container and let sit for an hour or two to let the flavors meld more, though it is delicious immediately too.  You could probably use lemon juice (or lemon extract) for the lemon and orange juice (or orange extract) for the orange. Dinner tonight

This is my dinner tonight: rice with a pork bun, 1 chopped scallion, 2 chopped tomatoes, some pickled daikon radish, some kimchi, and a bit of oyster sauce and sambal oolek. It was really good! And I prepped everything in less time than it took for the rice to cook. I don't usually arrange it this nicely or necessarily put in all of these ingredients.

Another blog!  Another food blog! What is the purpose of this blog? RX and JP were talking about food.  Variations on a Theme of Filled Things.  How to eat for a week without having to cook something new every day.  How to have semi-prepared meals ready for those days when you don't have a lot of time to cook.
